Effortless Family Meals for Busy Marathon Runners

Effortless Family Meals for Busy Marathon Runners

Double Up Your Family Meals

Family mealsTraining for a marathon is a huge commitment. It means long runs, speed sessions, strength work, stretching, recovery, and still finding space for the rest of life. If you’re a runner with a young family and a full-time job, you already know that the hardest part isn’t the miles on the road. It’s the juggling act. You’re up early for a run, squeezing in school runs, work meetings, and after-school chaos. You collapse at the end of the day wondering if you’re giving enough to your kids, your partner, your job, and yourself.

Running is your escape, your chance to breathe, but the guilt can creep in. That nagging thought that maybe you should be spending that hour with your family instead of heading out for a run. Add on the daily question of “What’s for dinner?” and the load feels heavier.

So let’s try to lessen that load. One simple strategy can cut your kitchen time in half while keeping everyone fed with real, nutritious food. It’s called double cooking, and it’s the secret to making easy family dinners a regular thing instead of a stressful scramble.

What is Double Cooking?

The idea is simple. Instead of cooking every night and starting from scratch, you cook the same meal in double portions. One portion goes on the table for dinner, the second goes into the freezer for another night. That means one week of cooking gives you two weeks of family meals.

You know that feeling when you sometimes you wish there were two of you. Double cooking gives you just that in the kitchen. One of you cooks tonight’s meal, and the other magically leaves a meal in the freezer for next week.

It’s not about complicated batch cooking sessions with twenty containers of rice and chicken lined up on the counter. It’s about being smart with the meals you already make. Roast two chickens instead of one. Brown twice the mince for bolognese. Make a double tray of lasagna. The effort is almost the same, but the payoff is huge.

By doubling up, you:

  • Cut cooking time in half for the following week
  • Have a freezer stocked with ready-to-go family dinners
  • Avoid last-minute takeaways
  • Save money by buying in bulk
  • Give yourself more breathing space for running and recovery

Juggling Marathon Training and Family Meals

Family mealsWhen you’re marathon training, nutrition is critical. Your body needs fuel to run, recover, and stay healthy. But your family needs good food too. Double cooking means you can balance both without feeling stretched thin.

Think of it like your long runs. You build a base now that pays off later. Doubling meals builds a base in your freezer. On the days you’re home late from a training session, or you’re too tired to cook after work, you’ve got a homemade meal ready to heat. That reduces stress and guilt in one go.

You also model healthy habits for your kids. They see you running, fuelling your body well, and still sitting down together at the table. That’s inspirational for your kids.

Family Meals that Work Well for Double Cooking

Family mealsHere are some practical, runner-friendly meals you can double without doubling your stress. These are true easy family dinners that please both kids and adults.

1. Roast Chicken

Roast one chicken? Might as well roast two. It takes the same oven space, the same time, and only a little extra seasoning. Tonight, serve it with roasted vegetables and potatoes. Freeze the second chicken in portions. Later it can become chicken curry, enchiladas, or a hearty soup.

2. Bolognese Sauce

Bolognese is the champion of double cooking. Brown twice the mince, double the tomatoes, and you’re done. Eat it with pasta tonight, then freeze the second batch. It reheats perfectly and can also be layered into lasagna.

3. Chilli

Another freezer hero. Make a double pot with beans, vegetables, and spices. Tonight, have it with rice. Next time, serve it over baked potatoes, in wraps, or with tortilla chips. It’s versatile and filling.

4. Curries

Chicken, vegetable, or lentil curries freeze beautifully. They’re packed with flavor and can be paired with rice, naan, or even piled over roasted sweet potatoes.

5. Lasagna

Yes, lasagna takes a little more effort to assemble, but if you’re making one, making two isn’t much harder. Freeze the second unbaked. When you’re ready, just cook it from frozen and enjoy.

6. Soups and Stews

Hearty vegetable soup, beef stew, or chicken noodle soup are all great for freezing. They’re comforting, nourishing, and quick to reheat.

7. Fajitas or Stir-Fry Kits

Chop twice the vegetables and marinate double the chicken or beef. Freeze half uncooked in a bag. When you’re ready, just defrost and cook.

Double Cooking Your Family Meals in Practice

  • Pick your family favourites
Choose the meals your household already loves. Stick to what works.  Pasta dishes, curries, stir-fries, and roasts are all great options. If everyone eats it happily, it’s worth doubling.
  • Check your freezer space
A little organization goes a long way. Clear a shelf in your freezer and keep some containers or freezer bags ready. Label meals with the name and date clearly. (You won’t remember what’s in the container, so don’t skip on the labels!)
  • Plan one week at a time
If you normally cook five meals a week, plan to double them. That’s ten dinners with the same effort. The following week, you can cook less and rely on your freezer stash.
  • Think building blocks
Some meals can be cooked once and repurposed. Roast chicken tonight can become soup, sandwiches, or pasta later in the week. Cooked mince can be split into two dishes: bolognese and chilli.
  • Invest in good containers: Reusable freezer containers or zip-top bags save space. Lay bags flat in the freezer for a neat stack.
  • Cook once, use twice: Roast vegetables tonight, then use leftovers for a quick salad or pasta tomorrow.
  • Season lightly for freezing: Some herbs intensify over time, so you can add fresh herbs when reheating.
  • Involve the kids: Let them help with stirring, chopping soft veg, or setting the table. It turns dinner into family time.

A Week of Family Meals in Practice

Here’s how one week of double cooking might look for a marathon-running parent:

  • Monday: Roast two chickens. Serve one with roasted veg. Freeze the other.
  • Tuesday: Cook double bolognese. Eat half with pasta. Freeze the rest.
  • Wednesday: Make a big pot of chilli. Have it with rice. Freeze half.
  • Thursday: Double tray of lasagna. Bake one, freeze the other.
  • Friday: Curry night. Cook double batch of chicken curry. Freeze half.

That’s five nights of cooking. Next week, you can pull from the freezer and enjoy five homemade family dinners with almost no effort.

Stress-Free Family Meals? Maybe Not - But Definitely Less Stress

I’m not saying double cooking will take all the stress out of your life, but it just makes sense. I really wish I had done it more when my kids were small. Imagine having all that food already prepared in your freezer. On those days when you need to be in three places at once and still fit your run in, it’s absolutely invaluable.

Marathon training alongside family life is no small task. It takes planning, patience, and creativity. But you don’t need to do it all the hard way. Double cooking is a small shift with a big impact. It halves your kitchen time, fills your freezer with real food, and gives you more time to run, recover, and be present with your family.

Double cooking isn’t just for family life. Anyone can make use of this time-saving strategy. Young couples can prep meals in advance so weeknights feel easier. People living alone can batch cook to avoid the temptation of takeout and have healthy, satisfying dinners ready at a moment’s notice. Even if your schedule isn’t packed with school runs or marathon training, having a freezer stocked with homemade meals takes the stress out of everyday life and gives you more time to focus on the things you love. It really works for everyone.
